
Taco Tuesday
Northern Mexico cooks with wheat, which is why the flour tortilla exists at all, and it is where this night starts: with your hands in dough. You mix, rest, roll, and cook your own tortillas on a hot comal until they blister. Almost nobody has done this before, and it quietly ruins the store-bought kind for you.
Nothing is pre-cooked. You poach chicken and shred it hot, then simmer it in a salsa roja you make yourself from charred tomato, onion, garlic, and chile. That is the lesson of the night: a filling built from raw, not scooped from a pan.
While that comes together, the table gets its spread, and an agua fresca gets mixed for the room. Then everyone sits down and eats what they made.
On the menu
- Tortillas de Harina: flour tortillas from scratch, mixed, rested, rolled thin, and cooked on the comal
- Pollo con Salsa Roja: chicken poached and shredded hot, then simmered in a salsa roja you build from charred tomato, onion, garlic, and chile
- Para la Mesa: the garnish spread that makes a taco yours, cut and set out for the table
- Agua Fresca: fresh fruit, a little sugar, cold water
What's included
Chef-guided, hands-on instruction, all ingredients and equipment, and aprons. You cook the full menu across stations, then sit down and eat it together. The recipes go home with you.
What to bring
Just your appetite. Everything is provided, and you are welcome to bring wine or beer to enjoy with your meal (BYOB).

None. Beginner-friendly through advanced, all are welcome.
Suitable for
Adults of all skill levels. Good for date night, for friends, or for meeting other people who like to cook. Kid-friendly too: ages 14+ with a participating adult, and younger with advance approval. Most dietary restrictions can be accommodated with advance notice.
